Carrot halwa







Ingredients

Carrot 4 (big)- Grated
Sugar 1 cup
Milk  1 1/2 cup
Ghee 3 tbs
Cardamom powder
Cashews & raisins





Methods

1. Pressure cook carrot , sugar and milk for 1 whistle.
2. Transfer this to a pan and add 2 tbs ghee and stir till it absorbs  the milk and becomes dry.
3. Add cardomom powder and cashews & raisins (fried in ghee).

Lady's finger fry







Ingredients

lady's finger 250 g
curry leaves
coriander leaves
chilli powder 1tbs
turmeric powder 1/2 tbs
cumin powder 1tbs
corn flour 3tbs
oil 4tbs
salt




Method


1.Cut the two edges of  lady's finger and then cut it vertically ,that is, just make a slit ( dont cut into 2 pieces )
2. Mix salt, turmeric pwdr, chilli pwdr, cumin pwdr and little water and make a paste.
3. Marinate lady's finger in that paste and keep it aside for 5 or 10 minutes.
4.In a nonstick pan add oil and when it becomes hot , add curry leaves and then add lady's finger.
   Mix it well and close the lid and cook for few minutes. (stir occasionally )
5.When it is almost done or when lady's finger starts to shrink add corn flour and 1 tsp oil.
    Mix well and cook for few more minutes , cornflour will make a coat on  lady's finger.
6. Turn off the flame and add coriander leaves and serve .

Bread halwa






Ingredients

Bread  8 slices
Sugar 5tbs
Milk 1 cup
Ghee 4tbs
Cashew & raisins




Method


1. Cut the four sides of the bread first and then cut the bread into small pieces.
2. In a pan add ghee and add the bread slices into it and saute it till it becomes light brown.
3. Add cashew and raisins to it.
4. Then add milk to it, add more if required.( ie till  the bread pieces absorbs milk )
5. Add sugar to it...

Puliinji






Ingredients

ginger 3 tbs
tamarind pulp 1 cup (concentrated)
greenchilli 2
curryleaves
shallots 2to 3
jaggery 1/4 cup
dry redchilli
chilli powder 1ts
turmeric powder 1/2 ts
coriander powder( optional) 1 ts
salt
oil


Method

1. In a pan add oil and splutter mustard seeds , then add ginger saute for few minutes.
2. Then add shallots, greenchillli, dry red chilli,  curry leaves and saute for few more minutes.
3. Add 1 cup tamarind pulp( soak tamarind in 1 cup water for 10 to 15 mnts and then squeeze  tamarind to get the extract and filter it ).Stir well.
4. Add salt, turmeric powder, chilli powder, coriander powder and mix well and bring to boil.
5.Once it starts to thicken add  jaggery( u can increase or decrease the quantity according to ur taste)
6. Continue to boil till it reaches the required consistency (thick).

Sharjah shake





Ingredients

banana 3 or 4
milk 1 cup
sugar
boost or bournvita 1 tsp
icecream 1 scoop


Method

1. Blend together banana, sugar and milk ( milk should be kept in freezer for atleast 2 or 3 hrs before    blending).
2. Once it is  done add boost and icecream and blend it for few seconds.
3. Pour it in a serving glass and have it or you can keep it in refrigerator and store.

Biscuit pudding with chocolate sauce




Ingredients

marie gold biscuit 1 pack (200g)
butter 100g
milk 1 1/2 cup
sugar 1 cup
cocoa powder 3 tbs
cornflour 2 tbs
vanilla essence 1 ts



Method

1. Mix biscuit and butter well. If you want , you can blend it in mixer.And keep the biscuit crumbs aside.
2. In a pan add milk, sugar, cocoa powder, cornflour and bring to boil or till it becomes a thick sauce.
3.Once it cools add vanilla essence and mix.





Setting

 In a bowl or glass , whatever you prefer,...line half of the biscuit crumbs evenly and press.
 And then pour the chocolate sauce over it and make the second layer.
 Then add the rest of the buscuit crumbs above it and refrigerate it for 4 to 6hrs.

 Serve it with ice cream.
Or else you can add fresh cream..


 

Pazham vattiyathu( banana fry )




Ingredients

banana 2
ghee  3or 4 tbs
sugar

Method

1. Cut banana into small pieces.
2. In a nonstick pan add ghee and place the pieces of banana into it and fry for few minutes in low flame. Once it turns to light brown or golden brown ,turn the sides and fry the otherside in the same way.
3.Once it is done transfer it into a serving plate and sprinkle sugar on top of it.

Vendakka masala(lady's finger masala)



Ingredients

vendakka( lady's finger) 250g
ginger garlic paste   1ts
greenchilli 1
curry leaves
onion 1 small
tomato 1 small
turmeric powder 1/2 ts
chilli powder 1tbs
coriander powder 1tbs
oil
salt

Method

1. Cut lady's finger diagonally.And keep it aside.
2. In pan, take some oil and add ginger garlic paste, green chilli , curryleaves and saute for a minute and then add onion and saute for few  minutes.
3. Add all masala powders and saute .
4. Add lady's finger into it, stir well and close and cook for few minutes.
   In between open it and stir . Add little water if needed.
5. Add tomatoes and mix well.close it and cook till lady's finger and tomatoes are done.

Capsicum rice

Ingredients

basmati rice 1 cup
capsicum 1
onion 1 (small)
curry leaves   few
mustard
coriander powder 1 tbs
chilly powder 1 ts
garam masala 1/2 ts
salt


Method

1. Cook rice separately ( add salt while cooking) and keep it aside.
2. In a pan add oil and sputter mustard and then add curry leaves.
3. Add finely chopped onion and saute till it becomes soft.
4. Add all masala powder and salt.
5. Finally add capsicum and saute. Don't saute for too long as the crispiness of capsicum goes off.
6. Add cooked rice and mix well. Serve hot.
 

Carrot kheer

Ingredients

carrot   2
cashew 3
milk  2 cups
sugar 5 tbs
vanilla essence 1 drop
saffron 3 or 4 strands
ghee 2 1 tbs


Method

1. Pressure cook carrot for 2 whistle and grind carrot into a smooth paste.
2. In a pan add ghee and  cashew and saute it till it becomes light brown and keep it aside.
    And then saute the ground carrot in the ghee till the raw smell of carrot goes off.
3. Then add milk to it and then sugar ,stir well.
4. When it starts to thicken add vannilla essence and saffron strands.

Serve hot or cold..
